The Colorful Way to Eat
 

   The recommendation of the USDA Dietary Guidelines  is to eat 5-9 servings of fruits and vegetables a day.

   The fun way of getting your fruits and vegetables  is to think of the colors of the rainbow.

   Fruits and vegetables come in all kind of colors.

   The more colorful the fruits and vegetables, the more beneficial they are. However, less colorful foods such as garlic have benefits too.

 

   

   The colors of fruits and vegetables are due in part to chemicals call pigments. These pigments are also known as Phytochemicals.

   “Phyto” comes from Greek word for plant. Some of the phytochemicals that are responsible for the color of fruits and vegetables are:

Lycopene for RED

Carotenoid for ORANGE, GREEN, and YELLOW

Anthocyanin for BLUE and PURPLE

Anthoxanthin for WHITE
